Cauliflower Crust Breakfast Pizza

Ingredients:
For the crust:
1 large head cauliflower, riced
1 egg
1/3 cup dairy-free sour cream
1 teaspoon dried oregano
Salt

For the toppings:
3 eggs
Dairy-free cheese
4 slices turkey bacon
3/4 cup marinara sauce
2 handfuls arugula
DIRECTIONS:

Prep Time: 12 minutes l Cook Time: 50 minutes
To prepare the crust:
Cut the cauliflower into florets, then place into a food processor until the cauliflower is completely riced. Wrap the rice in a durable paper towel and squeeze out all of the liquid. Repeat this until no more water remains. Place the rice in a large bowl, and mix in the remaining ingredients for the crust.

Use ghee or dairy-free butter on a piece of parchment paper. With your hands, form a ball using the crust ingredients and place it on the parchment paper. Flatten it out to about an inch.

Place this in the oven and cook for around 30 minutes on 375/until optimal crispness.

While this is cooking, make 3 eggs over easy on the pan and cook the turkey bacon. Once the crust is crispy, pour on the sauce, spatula off the eggs onto the crust, then add the rest of the ingredients on top. Add any others as you wish!

Cook for an additional 20 minutes.
